One of the big problems with most holidays is that we tend to serve very heavy food and this is not great for our health. This is a problem which can be corrected by preparing instead healthy meals which are just as delicious as anything else you’re used to preparing. Here are three recipes you should definitely try:
1. Salmon cakes.
This is a simple dish for which you can use leftover salmon. Here’s how you prepare it: heat some oil in a large skillet, add onion and celery and stir for about 3 minutes. Then add parsley. Put the salmon ina bowl and use a fork to take it apart. Add egg and mustard, mix and add the onion mixture, breadcrumbs and pepper. Make patties and cook them.
2. Crab bisque with avocado and corn relish.
This is a recipe for 8 portions. Combine avocado, corn, tomato, lime juice, salt and pepper to make the relish. Then heat oil in a saucepan, add corn, onion and bell pepper, cook and stir. Then add sherry, let it reduce and add stock or broth. Puree the vegetable mixture, return it to the pan, atir in milk, crab and salt. Cook for 3 to 5 minutes.
3. Caprese salad.
This dish would make a great appetizer. It has only 110 calories per serving and it’s very tasty. You need 3 cups of cherry tomatoes, 3 tbsp of balsamic vinegar, 3 tbsp of fresh basil leaves, ¼ tsp of salt and ½ tsp black pepper. Cut the cherry tomatoes in half, slice the mini mozzarella balls, add them to the tomatoes, then add basil leaves, vinegar, salt and pepper.
